Get Well Soup

I'm not a fan of chicken soup, but with the addition of leek, I would eat this one even when I'm not sick.
 
With all the traditional ingredients and garlic to help you get well, this soup is delicious.
 
Get Well Soup


3 chicken breasts
4 cups chicken or vegetable broth
2 Tbs. butter
1/2 onion, chopped
4 carrots, peeled and sliced
3-4 stalks celery, chopped
1 leek, chopped
a hand full of chopped fresh parsley
3 cloves garlic, minced
2 Tbs. flour
Salt and Pepper to taste
grated Parmesan cheese

In a large pot, pour in the broth and put the chicken breasts in.  Turn heat to high until it comes to a boil.  Turn down heat to medium and cook until chicken is done. 

Meanwhile, melt butter in a large skillet and add onion, carrots, celery, leek, and garlic.  Over low heat, sweat the vegetables until they are soft.  I usually add a ladle of broth to speed it up.

When chicken is done, remove from pot and shred or chop.  Return chicken to the pot and add vegetables.  Remove a little broth from the pot to a bowl and whisk in the flour till smooth.  Pour back into the pot and stir.  Add additional broth or water if needed.  Simmer 10-15 minutes.  Toss in chopped parsley and stir.  Season to taste with salt and pepper.

Ladle soup into bowls and sprinkle with Parmesan.

+++ If you like, you can add noodles, acini de pepe, gnocchi or other pasta to the broth and cook till done.
